Flourless Chocolate Cake with Whipped Cream and Raspberries

Flourless Chocolate Cake with Whipped Cream and Raspberries

Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.

Chocolate Cuppuccinos

For a luscious mocha dessert this recipe cannot be beat. It is as easy to make as any chocolate pudding mix, but has a deep dark mocha taste that will have everyone begging you for the recipe. They will never believe that it was this easy. This recipe makes four small servings or two very generous servings. Dust the whipped cream with cocoa, cinnamon, or nutmeg for a special final touch.

1 package chocolate fudge pudding mix
1 tablespoon instant espresso powder
1 1/2 cups milk
Whipped cream

Place the pudding mix and espresso powder in a medium sized bowl and whisk together. Add the milk and whisk until well mixed. Pour the pudding into individual dishes. Chill for at least one hour. Add a dollop of whipped cream to each dish and garnish as desired.

Makes 4 servings.

Preparation Time: 5 minutes
Chilling Time: 1 hour
Total Time: 1 hour, 5 minutes
