Angel Hair Nests with Olive "Eggs"

Perfect for spring, this easy and delicious recipe makes a great appetizer, side dish, or entree and will add a bit of whimsy to your spring table. And all in just about 15 minutes total time!





Vegetable Ribbons

These vegetables have a simple, yet elegant appearance that makes it hard to believe that they can be made in less than 15 minutes. The brightly colored vegetable strips look like the ribbons on packages, making this festive dish perfect for the holidays. The ribbons are easy to make with a vegetable peeler. The simple sauce lets the sweet flavor of the vegetables shine through and goes well with the strong flavors of the rest of the menu. The vegetables can be cut into ribbons and covered with cold water for up to 12 hours before cooking.

3 large carrots, peeled and cut into wide thin slices
1/2 cup water
2 medium zucchini, cut into wide thin slices
2 medium yellow squash, cut into wide thin slices
6 tablespoons butter
3/4 teaspoon sugar
1/2 teaspoon salt
1 teaspoon Herbes de Provence or favorite dried herb mixture

Combine the carrot ribbons and water in a 3 quart microwave proof casserole dish. Microwave on high for 4 minutes. Add the zucchini and yellow squash ribbons, and microwave for 3-4 minutes more, or until the carrots are tender. Drain the vegetables well and add the remaining ingredients. Toss to coat evenly with the sauce. Serve hot.
