Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Spicy Cheese Wafers

Homemade crackers? You bet! Much better than store bought crackers and much easier to make than you would ever imagine, these crackers are excellent with cheese, dips, or eaten just plain.

2 cups grated sharp cheddar cheese
1/4 cup soft unsalted butter
1/2 cup flour
1 1/2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon cayenne pepper

In a medium bowl, combine all of the ingredients until well blended. Shape into a long roll, about 1 inch round. Wrap with plastic wrap and chill for at least 4 hours, and up to two days. Preheat the oven to 450 degrees. Cut the roll into 1/4 inch thick slices and arrange 2 inches apart on ungreased baking sheets. Bake for 5 minutes, or until lightly browned on the edges. Cool and then seal tightly in an airtight container.

Makes about 50 crackers.

Preparation Time: 10 minutes
Chilling Time: 4 hours
Cooking Time: 5 minutes
Total Time: 4 hours, 15 minutes
