Flourless Chocolate Cake with Whipped Cream and Raspberries


Diet, Schmiet. Some foods are worth breaking New Year's Resolutions - and this cake definitely fits the bill. Delicious, decadent, and drop-dead gorgeous, this cake is one of my favorite go-to recipes whenever I need the perfect finale for a celebratory meal.





Easy Salmon Ball

The best appetizers are those that can be made quickly, made in advance, and taste great. This appetizer meets all the above criteria and then some. Try it with your favorite crackers, breads, or crudités.

8 ounces cream cheese, softened
1 tablespoon fresh lemon juice
1 tablespoon grated onion
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/2 teaspoon liquid smoke
3 tablespoons grated green pepper
1/3 cup grated peeled cucumber, drained
1 15 ounce can salmon, skin and bones removed
1/2 cup finely chopped fresh parsley

Cream all of the ingredients together except for the salmon and parsley. Fold into the salmon until well mixed. Chill overnight. Form into a firm ball and roll in the parsley mixture. Chill until ready to serve. Can be made up to 24 hours in advance.

Makes 1 Salmon Ball.

Preparation Time: 5 minutes
Chilling Time: 6 hours
Total Time: 6 hours, 5 minutes
