Monster Mashed Potatoes
This is a really fun recipe. There are two ways to make it. I prefer using a variety of potatoes and vegetables, but you can also make this dish using all potatoes, and just divide the potatoes into four bowls and dye them. Purple potatoes are common in our area in the larger grocery stores, but if you cannot get them , just use red and blue food colors to get a grotesque purple hue. Carrots or squash work well in place of the sweet potatoes. Spinach, peas, broccoflower, or even lima beans work great as a green ingredient.
1/2 pound cooked and mashed white potatoes
1/2 pound cooked and mashed purple potatoes
1/2 pound cooked and mashed sweet potatoes
1 pound cooked and pureed broccoli
1/2 cup butter
1/2 cup heavy cream
salt
pepper
freshly grated nutmeg
Place each vegetable in a separate bowl. Add 2 tablespoons butter, 2 tablespoons cream, and salt, pepper, and nutmeg to taste to each vegetable. In a large bowl gently swirl the four vegetable mixtures together, making sure that each color remains distinct in areas. Serve hot.
