Black, Orange and Green Salsa
I love salsa. I always just whip it up using any ingredients I have on hand. For this salsa I wanted a Halloween colored combination, but this mixture is so good I use it year round, using whatever peppers and tomatoes I have on hand. It makes for a great salsa. Try it over simply cooked fish or chicken, or in a bowl with Halloween Tortilla Scoops on the side. I hate cilantro. I am one of a small percentage of people who taste cilantro as being something akin to soap scum. My taste testers loved this version though. If you and your guests like cilantro, use this version. Otherwise, omit the cilantro and use a little bit of flat leaf parsley instead for flavor and color.
1 1/2 cups cooked drained black beans
2 ripe avocadoes, peeled, pitted, and diced
4 orange tomatoes, diced and seeded
1 medium red onion, diced
1/4 cup freshly squeezed lime juice
2 teaspoons olive oil
3 tablespoons minced cilantro
Toss all of the ingredients together. Serve immediately for best flavor.
