![]() ![]() | Roasted Pepper Hummus
This is my favorite hummus variation. What makes it perfect for Halloween is making it with roasted orange peppers for marvelous color and flavor. This is fantastic served with Black Bean Hummus with its incredible black color and Halloween Pita Toasts. You can make your own roasted peppers, or used canned. The amount of roasted peppers is to taste, so use your own judgement. This recipe can be made with any color roast pepper. 2 cups drained cooked or canned chick peas (water or liquid reserved) 1 chopped large roasted orange bell pepper 5 tablespoons tahini 1/4 cup lemon juice 2 tablespoons olive oil 4 cloves crushed garlic 3/4 teaspoon paprika 1/2 teaspoon ground coriander 1/4 teaspoon cumin pinch cayenne pepper Place the drained beans in a food processor or blender with the tahini, lemon juice, and oil. Puree until smooth. Add some of the reserved liquid until the hummus forms a thick paste. Add the remaining ingredients and puree to blend. Spoon into a serving bowl and chill for at least two hours for the flavors to blend. |
