Curried Onion Rounds
There is something about fall, orange, and curry that just go together. This is another one of my appetizer staples that I make all the time. They have been "Halloweenified" by adding a little orange food coloring. Oddly enough this actually makes them quite attractive. Adding a little additional paprika to the mayonnaise mixture mimics this effect in a more natural way. These are so easy it seems almost sinful to include a recipe for them. They make a wonderful appetizer that is different and pleasing to the palate. I personally love these served with a side of tart cranberry relish, but most people just snap them up plain.
1/2 pound pearl onions
1/3 cup mayonnaise
orange food coloring
curry powder to taste
1/4 teaspoon salt
1/8 teaspoon white pepper
1 tablespoon minced chives
Thinly peel and slice the pearl onions. In a small bowl mix together the mayonnaise, orange food coloring, curry powder, salt, pepper, and chives. Place an onion slice on each slice of pumpernickel bread and set on a large cookie sheet. Dollop with a small amount of the mayonnaise mixture and broil until golden brown and bubbling.
