Easy Black or Orange Lentil Dip
This is one of the many great dips that I developed for a Halloween cocktail party where every item on the menu was either black or orange, and was a dip, spread, or other appetizer. I made two of these dips. The black dip I made as described below, but to the orange one I added a tablespoon of curry powder. It was fabulous. This dip can be easily made with your favorite color of lentil. For a vegetarian dip, just use a very flavorful vegetable stock instead of the chicken stock. Fat free yogurt can be used for a very healthy dip if desired. You can also make two seperate versions of this dip (one of each color) and then gently swirl them together in a glass bowl for a beautiful and exotic looking dip.
2/3 cup orange or black lentils
1 3/4 cup chicken stock
2/3 cup plain yogurt
1 clove garlic
salt and pepper
Simmer the lentils and stock until all of the water has been absorbed. Cool the lentils then process with the remaining ingredients until smooth and creamy.
