Shredded Fingers and Ants
I detested this salad when I was little. I still am not a huge fan of it. However, I know it stillhas legions of fans who think carrots and raisins together is a match made in heaven. (Or maybe in this case, hades!) This simple salad with its bright orange color will be sure to liven up any Halloween menu.
3 cups shredded carrots
3/4 cup raisins
3/4 cup freshly squeezed orange juice
1/4 cup vegetable oil
1 tablespoon honey
pinch freshly grated nutmeg
In a large bowl toss together the carrots and raisins. In a small bowl mix together the orange juice, oil, and honey until smooth. Add a pinch of salt and toss over the carrot mixture. Toss to coat thoroughly. Let marinade for at least 3 hours in the refrigerator. Serve chilled.
