Marshmallow and Crispy Rice Tricky Treats
I hate plugging any particular product or company in particular. So ignore the awkward title for this recipe. I am sure that all of you know what I am talking about. (hint, hint…three little elves…) These are quick, easy, fun, and you know that kids love them. I have also used this method with popcorn balls which works well. You can make really cute Halloween Pumpkins by creating a large batch of orange colored marshmallow crispy rice and a small batch of green crispy rice. Form balls with the orange and make stems with the green. Add candy corn and other shapes to form jack o' lanterns or leave plain. Frosting tint works much better in this recipe than food coloring, although regular food coloring will work. Mix different colored bars in a box with a wide selection of candy for a special presentation.
1/2 cup butter
Orange frosting tint, or red and yellow
9 cups miniature marshmallows
10 cups crispy rice cereal
2 cups miscellaneous small Halloween candy (candy corn, etc.)
1 cup miniature chocolate chips
1 cup chopped peanuts
Line a large jelly roll pan with parchment or wax paper and grease. Melt the butter in a heavy saucepan or in the microwave. Add frosting tint or food coloring (be generous). Mix in the marshmallows and heat, stirring frequently until melted. In a very large bowl, mix together the cereal, candy, chocolate chips, and peanuts. Pour the marshmallow mixture over the cereal mixture and toss well to coat and combine with well greased hands. Immediately pour into the prepared pan and press down into the pan. Top with additional candy if desired. Let sit until firm and then cut. Stores well at room temperature or in the refrigerator in a sealed container.
