Cinnamon Glazed Pumpkin
This simple glazed pumpkin dish makes a great side dish with turkey, chicken, pork, or beef. The pumpkin can be cooked up to two days in advance and refrigerated until ready to make the dish. Toasted pecans, almonds, or walnuts also make a nice crunchy addition to this dish.
2 pound pumpkin, seeded, peeled, and cubed
1/3 cup butter
1/3 cup dark brown sugar
2 teaspoons cinnamon
Boil the pumpkin in lightly salted water for 20 minutes, or until tender but still firm. Drain well. Melt the butter in a large skillet. Add the brown sugar and cinnamon and stir until the sugar melts. Add the pumpkin and toss to coat in the brown sugar mixture. Cook for 5 minutes and serve hot.
