Black Bean Cream Cheese Dip
I taste tested and tried so many different black bean dips that it was impossible to come up with a favorite one. However, this is my favorite black bean dip to serve with "fragile" dippers like Halloween Won Ton Skins or Healthy Potato Chips. It is a soft creamy dip that is excellent with crispy dippers or vegetables. I also adore it as a nacho base that is a little bit different, but very very good. This dip works well with low fat cream cheese, but do not use whipped cream cheese.
16 ounces softened cream cheese
16 ounces drained and rinsed black beans
1 small red onion, minced
2 minced garlic cloves
dash hot pepper sauce
Blend together all of the ingredients until smooth in a blender or food processor. Spoon into a bowl, cover, and chill for at least three hours, or overnight. Serve chilled, at room temperature, or even slightly heated.
