Ghost Fingers and Bloody Eyeballs
This simple "appeteaser" is a great snack or party dish for children to help you prepare. Peeled tomatoes can get a little bit watery, so make sure to serve the picks on a non-paper plate and don't make them too far ahead of time. This also makes a simple salad when tossed with olive oil, vinegar, garlic powder, and basil. You can also use your favorite Italian dressing. For an easier to eat salad, halve the tomatoes and chop the fingers. Call it Chopped Ghost Finger and Halved Eyeball Salad.
24 cherry tomatoes
12 string cheeses
Place a medium heavy saucepan over high heat, and add several cups of water. Bring the water to a boil. Carefully drop the tomatoes into the water and boil for a few seconds. Remove and the peels should come of easily. If not, drop back in the water and boil for a few more seconds until the tomatoes peel easily. Cut the string cheese in half lengthwise (to form two finger shaped pieces). Attach one "bloody eyeball" and one "ghost finger" to each toothpick and serve.
