Stuffed Monster Heads
Another favorite orange colored dessert recipe, this is a tried and true (and much beloved) holiday recipe that works perfectly for Halloween to add some low fat bright orange color to any Halloween buffet.
1 (1/2 ounce) package sugar-free orange gelatin
1 cup boiling water
1 cup cold water
3/4 cup reduced fat evaporated milk, chilled
1 cup low fat cream cheese, at room temperature
tangerine segments and mint sprigs to decorate
Dissolve gelatin in boiling water. Add cold water. Set aside until just beginning to set. Whip evaporated milk until thick. Place cream cheese in a separate bowl and beat until smooth. Gradually beat milk into cream cheese until thoroughly combined. Fold gelatin into the cream cheese until evenly mixed. Pour mixture into 3 3/4 cup mold. Cover and refrigerate until set. When ready to serve, unmold onto a serving dish. Decorate with tangerine segments and mint sprigs.
