If you are wondering why this is a killer mousse it is probably because your heart needs to stop beating for a few minutes just to catch up with the cholesterol. This is a serious chocolate mousse. It is not something you would want to eat every day, but it is certainly worth waiting for. I like serving this mousse at Halloween parties with my dark decadent Pumpkin Rum Mousse or Pumpkin Orange Mousse. Add a few cookies and whipped cream and your dessert needs are all set. 12 eggs, separated 2 teaspoons vanilla 3 tablespoons almond liqueur 1 pound high quality german sweet chocolate, melted and cooled 4 tablespoons sugar whipped cream if desired chocolate curls Beat the egg yolks, vanilla, and almond liqueur in a large bowl. Very slowly add the cooled chocolate to the egg yolk mixture and blend well. In a separate bowl whip the egg whites and sugar until stiff. Gently fold the chocolate mixture into the egg whites. Gently spoon into a large serving bowl or individual dishes. Chill for several hours. Serve with whipped cream and chocolate curls if desired. |
