Boo-lgur Pilaf

I had to fight suggestions from my taste testers to change this recipe title to "Booger Pilaf". Even I have my limits. This is a great side dish that we adored with Roasted Heart. The flavors and textures just paired very nicely. It is a great and versatile side dish that makes a nice change from traditional pilafs.

1 cup sliced mushrooms
1/2 cup cracked wheat bulgur
1/2 cup chopped onion
2 tablespoons oil
1 1/4 cups chicken stock
1/4 cup toasted nuts, coarsely chopped
2 tablespoons chopped parsley
2 teaspoons lemon juice
1/8 teaspoons dried mint
salt and pepper

Saute the mushrooms, bulgur and onion in oil until the onion is tender and the bulgur is golden brown. Add the stock and bring to boil. Simmer, covered, for about 20 minutes or until all of the stock is absorbed and the bulgur is tender. Add the nuts, parsley, lemon juice, mint, salt and pepper to taste. Serve hot.
