Maggots with Toasted Almonds
Doesn't it seem that just about everything these days is being served with toasted nuts? Well, not everything is being served with toasted nuts in my kitchen. Especially not maggots. *shudder* Of course the maggots are simply white rice, and this easy dish is tasty and perfect with some of the more flamboyant Halloween main and side dishes. A few times it has been an island of "normality" in a sea of freaky Halloween dishes.
2 cups rice
4 cups chicken broth
salt and pepper
1/4 cup butter
1/2 cup slivered almonds
Cook the rice in the chicken broth until all of the liquid is absorbed. Season to taste. In a small skillet melt the butter and cook the almonds until golden brown. Add to the rice and serve hot.
