Mildewed Mashed Potatoes
It takes very little ingenuity to turn one of my favorite mashed potato recipes into something Halloweenish. Potatoes, chives, and cream cheese are a truly inspired combination, that can quickly turn into a great Halloween treat. This dish is a marvelously creamy version of mashed potatoes that will have everyone clamoring for seconds. Low fat and Fat free cream cheese also work very well in this dish, along with low fat margarine.
6 russet potatoes, peeled, cooked, and mashed
8 ounces soft cream cheese
2 tablespoons melted butter
salt and pepper
1/2 cup snipped chives
Puree all of the ingredients in a food processor until smooth, reserving some chives for garnish. Place in a well greased baking dish and sprinkle with reserved chives and additional paprika. Bake in a 350 degree oven for 20 minutes, or until heated through.
