Dirty Sweet Potatoes
A little imagination turns the holiday staple of Brown Butter Sweet Potatoes into a fun dish for Halloween. Sprinkling a little bit of freshly grated nutmeg over top the potatoes just before baking adds that perfect extra touch. This traditional preparation of sweet potatoes has just enough sweetness to bring out the flavor of the sweet potatoes without overpowering them. This dish can easily be made a day ahead.
2 pounds sweet potatoes, peeled, cooked, and mashed
3 tablespoons butter
2 tablespoons molasses
freshly grated nutmeg
In a small skillet cook the butter over medium heat until browned. Be careful not to burn the butter. Place the sweet potatoes, browned butter, molasses, and salt in a food processor and process until very smooth. Place in a greased casserole. Sprinkle with the nutmeg. This dish can be made up to a day ahead of time up to this point. Bake at 350 degrees for 30 minutes or until warmed through and lightly browned on the top.
