Stuffed Monster Heads
Mud Pie Snack Mix
I showed my culinary ingenuity at a very young age. My parents have vivid memories of some kitchen disasters to prove it. One of the things I adored making was snack mixes. They were easy to make, did not require use of the stove which I was not allowed to use when I was home alone, and always made me a really popular guest at lots of parties...as well as I brought my snack mix. This is one of my favorite variations from that time, Halloweenified. My White Ghost Snack Mix is another similar, but legendary, snack mix from that same era. I use a large extra wide stainless steel bowl to mix all of my snack mixes, but you can also mix this by distributing the mixture evenly between several smaller bowls.
4 cups shredded corn square cereal
3 cups salted pretzels
2 cups salted peanuts
1 1/2 cups semisweet or milk chocolate chips
1/2 cup smooth peanut butter
1/4 cup butter or margarine
1 1/2 cups powdered sugar
2 tablespoons baking cocoa
Spread out long sheets of waxed paper on a table or countertop. In a large bowl mix together the cereal, pretzels, and peanuts. Toss to evely distribute. Microwave the chocolate chips, peanut butter, and margarine at thirty second intervals, stirring between each interval until melted and smooth. Pour the chocolate mixture over the cereal mixture and toss well to coat evenly. Spread the mixture out on the prepared wax paper. In a small bowl mix together the powdered sugar and cocoa. Sprinkle the mixture over the chocolate coated mix. Let dry thoroughly. Place in a tightly sealed container to store.
