Cool, refreshing, and extremely low in fat and calories, these stacks make a perfect dessert dish. For extra special occasions, cut the watermelon into shapes, like stars or hearts, for a beautiful presentation. For non-dieters, regular whipped topping or whipped cream can be used. The stacks can be made in advance - but the whipped topping should still be partially frozen and the watermelon squares should be chilled before assembling - especially if the day is warm to prevent the stacks from sliding. The squares can be cut up to a day in advance and stored in a sealed container or wrapped in foil or plastic wrap to stay fresh.
20 3-inch wide thin squares of watermelon
1 cup fat free whipped topping
Place a dab of whipped topping on each of four dessert plates. Arrange a watermelon square on each plate. Spread each square with about a teaspoon of whipped topping. Place another square on top and repeat with the remaining squares and whipped topping until each stack has five levels.
