A great dish for dessert or breakfast, these crepes are easy to make, full of wonderful flavor, and make any occasion special. It also doesn't hurt that they are sinfully delicious!
Caramel Apple-Almond Crepes
A great dish for dessert or breakfast, these crepes are easy to make, full of wonderful flavor, and make any occasion special. Store-bought crepes make this recipe quick and easy, but you can also use your favorite dessert crepe recipe. If you want to make the dish in advance, the apples can be cooked ahead and rewarmed. Assemble the crepes right before serving though, as they will get soggy if you do it in advance. Make sure to use a good cooking apple like Golden Delicious, Granny Smith, or Macintosh for this recipe. For an all-adult dish, add some apple brandy with the nuts for a more grown up dessert. If desired, the almonds can be omitted.
8 crepes 3 medium apples, peeled, cored, and thinly sliced 2 tablespoons butter 1/4 cup sugar 2 tablespoons brown sugar 1/2 teaspoon cinnamon 1/4 cup sliced almonds Powdered sugar Whipped cream
Warm the crepes according to the package directions and keep warm until the apples are cooked. Melt the butter in a large heavy frying pan over medium heat. Add the apples, sugar, and brown sugar. Cook, turning the apples gently to coat for about 6-8 minutes, or until the apples are tender. Mix in the cinnamon and almonds and toss. Place a crepe on a plate and spread a thin layer of the apple mixture over half of it. Fold the crepe in half, covering all of the apple mixture, and then in half again to form a triangle. Repeat with the remaining crepes. Sprinkle with powdered sugar and serve with whipped cream. Serve immediately.
