Recipe of the Week - Pizza Bagel Omelets

Pizza for breakfast? Even parents won't dismiss this yummy concoction that mixes pizza toppings and an omelet for a tasty breakfast the whole family will love. Quick and easy to make, these omelets are perfect for sleep overs or other teenage parties.



Pizza Bagel Omelets
Leftover pizza has always been a favorite treat in the morning for teens (and even a few of us no longer in our teens). For a more traditional and nutritious breakfast that is perfect for sleepovers, parties, brunches, or any informal breakfast, try these omelets. They have enough traditional pizza flavor to satisfy even the pickiest eaters while still being "breakfast food". Any of your favorite cooked pizza toppings can be used…olives, mushrooms, peppers, pepperoni, ham, bacon, broccoli, onions…but you might want to consider holding the anchovies!
3 tablespoons butter
8 eggs
1/4 cup freshly grated Parmesan cheese
pepper to taste
2 teaspoons crumbled dried Italian spices
1 1/2 teaspoons garlic powder
2 cups favorite chopped pizza toppings
2/3 cup chopped and seeded tomato
1 cup grated Mozzarella cheese
2 sliced and toasted bagels
Melt the butter in a large heavy skillet. In a medium bowl, beat the eggs until light and fluffy. Add the Parmesan, pepper, Italian spices, and garlic powder and mix well. Add the beaten eggs to the pan and cook until almost set. Top with the pizza toppings and cook until the eggs are set and the toppings are heated through. Remove the omelet from the pan and cut in quarters. Fold each quarter into a triangle and place on top of a bagel half. Top with the tomatoes and Mozzarella. Broil until the cheese melts and the toppings are hot.

Makes 4 servings.

Cooking Time: 15 minutes
Total Time: 20 minutes
